Show breads

No pictures yet. Monday night, we made show dough, and made 2 beautiful display baskets from it. They were still baking when I left, so I couldn't get pictures.

Honey

Ok, this isn't strictly baking-related. But here's Honey, the best dog EVER!

Sugar

Thursday, we did poured sugar, sugar cages, spun sugar. Some of it got a little darker than intended.

We made panna cotta in order to have a dessert to garnish with our sugar, but there wasn't enough time for the panna cotta to set properly. Oh well, next week we'll do more garnishes.

Pain de campagne

Monday night, we made pain de campagne, and played around with making different shapes. We had a few technical problems, but the bread was deeee-licious!

Cappuccino Mousse in Chocolate Cups

These were lots of fun to make. There's a smooth creamy cappuccino mousse in a cup made of chocolate, with mousseline sauce and raspberry sauce, garnished with sambuco cream and a tuile cookie spoon. Fancy!
